I have been having a very difficult time being “raw” in my new residence. I have been making a green juice nearly every day, which is combating the junk I have shamefully been consuming. Living in a house where four other people are eating whatever they want, and inviting me along, well, let’s just say it is an internal battle. Being social oftentimes means eating and drinking, unfortunately. I have been here for 3 weeks now, so I am hoping things slow down a bit, and I can buy a food processor and start having raw meals regularly. Today was a good day, so far. I had the house to myself and I did not have to go anywhere, so I had two juices and a salad.
The salad is something very different for me, I usually just eat lettuce with a couple extras. I wanted to make Tabbouleh, but I couldn’t nail down a recipe, so I invented one.
Two bunches curly parsley
One lemon
Handful of cherry tomatoes
half an onion
One organic red pepper
Olive oil
salt, pepper, garlic salt
Chop the parsley, pepper, onion, and tomato ingredients really fine, making sure to consider the texture of each ingredient and its mouthfeel. Squeeze the juice out of the lemon, drizzle over the salad. Pour in about 2 tablespoons olive oil, sprinkle the salt and pepper, and garlic salt. Mix everything well in a large bowl. I put a handful of chopped raw walnuts on top of mine. It’s refreshing, filling, and super tasty.
